Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and lay the noodles flat on parchment paper to prevent sticking.

Peel, cube, and boil the potatoes in a large pot of water for about 15 minutes, or until fork-tender. Drain and transfer to a mixing bowl.

Mash the potatoes with 4 tablespoons of butter and 0.5 cup of milk until smooth. Stir in 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 1 cup of shredded cheddar cheese. Set aside.

Spread 1/3 of the remaining mashed potatoes over the noodles, followed by a sprinkle of caramelized onions and 1/3 cup of shredded cheddar cheese. Repeat the layering process (noodles, mashed potatoes, onions, cheese) two more times, finishing with a layer of cheese on top.

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Remove the casserole from the oven and let it rest for 10 minutes. Serve warm with a dollop of sour cream on top, if desired.
