Peel and dice the russet potato into 1-inch cubes. Place them in a medium pot, cover with water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about 12-15 minutes.

While the potatoes cook, peel and thinly slice the yellow onion.
