Heat a large skillet over medium-high heat. Add the olive oil, and swirl to coat the pan.
Season both sides of the chicken breasts with chili powder, cumin, garlic powder, salt, and black pepper.
Place the chicken in the skillet and cook for 6-7 minutes per side, or until the internal temperature reaches 165Β°F (74Β°C). Remove from the skillet and let rest for 5 minutes before shredding or slicing into thin strips.
To assemble the quesadillas, place a tortilla on a flat surface. Sprinkle 1/4 cup of shredded cheese over half of the tortilla.
Add 1/4 cup of shredded chicken and 2 tablespoons of pico de gallo on top of the cheese. Fold the other side of the tortilla over to create a half-moon shape.
Heat 1/2 tablespoon of butter in a large skillet over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
