📝 Instructions

8 steps
1

Wash and peel the carrots. Cut them into sticks about 3-4 inches long and 1/4 inch thick, or leave whole if they are baby carrots.

2

In a medium saucepan, combine the water, white vinegar, granulated sugar, and salt. Heat over medium heat, stirring until the sugar and salt are fully dissolved. Once dissolved, remove from heat and let the pickling brine cool slightly.

3

Sterilize a large glass jar or several smaller jars by washing them well with soap and hot water, then rinsing thoroughly.

4

Place the fresh dill sprigs, garlic cloves (lightly crushed), black peppercorns, and red chili flakes (if using) into the bottom of the jar(s).

5

Pack the carrot sticks tightly into the jar(s), leaving about 1/2 inch of space at the top.

6

Pour the warm brine over the carrots, fully covering them but leaving about 1/4 inch of headspace at the top of the jar(s). Tap the jar gently on the counter to release air bubbles, and ensure the carrots are submerged in the brine.

7

Seal the jar(s) with their lids, and allow them to cool to room temperature before transferring to the refrigerator.

8

Let the carrots pickle for at least 24-48 hours in the refrigerator before enjoying. For best flavor, allow them to pickle for one week.
