πŸ“ Instructions

9 steps
1

Season the beef chuck roast with salt and black pepper on all sides.

2

In a large skillet, heat the vegetable oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Transfer the roast to a slow cooker.

3

In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Transfer the mixture to the slow cooker.

4

Arrange the carrots, potatoes, and celery around the roast in the slow cooker.

5

In a mixing bowl, whisk together the Pepsi, beef broth, tomato paste, bay leaf, and dried thyme. Pour the mixture over the roast and vegetables.

6

Cover the slow cooker with its lid and cook on low for 8 hours or on high for 4 hours, until the meat is tender and easily falls apart with a fork.

7

Once cooked, remove the roast and vegetables from the slow cooker and place on a serving platter.

8

If desired, strain the cooking liquid and simmer it in a saucepan over medium heat to reduce and thicken into a gravy.

9

Serve the Pepsi pot roast warm with the vegetables and gravy poured over the top.
