Elevate your weeknight dinner with this irresistible Penne with Chicken Mango Sausage and Spinach recipe! Combining tender penne pasta with the subtly sweet and savory flavors of chicken mango sausage, this dish is a delightful twist on classic comfort food. A creamy garlic-Parmesan sauce brings everything together, while fresh baby spinach adds a burst of color and nutrition. With just a hint of red pepper flakes for a gentle kick, this 30-minute meal is as easy as it is flavorful. Perfect for a quick family meal or an upscale dinner, this pasta dish will keep everyone coming back for seconds!
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Slice the chicken mango sausage into 1/2-inch rounds and add them to the skillet. Cook for 4-5 minutes, stirring occasionally, until they are golden brown and heated through. Transfer the sausage to a plate and set aside.
Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, until fragrant, making sure not to burn the garlic.
Add the baby spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.
Lower the heat to medium-low and pour the heavy cream into the skillet. Stir in the parmesan cheese, red pepper flakes, salt, and black pepper. Simmer gently for 3-4 minutes until the cheese is melted and the sauce thickens slightly.
Add the cooked pasta and sausage back to the skillet. Toss everything together until the pasta is well coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.
Taste and adjust the seasoning if needed. Serve immediately, garnished with extra parmesan cheese if desired.
