📝 Instructions

11 steps
1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.

2

Season both sides of the chicken breasts with salt and black pepper.

3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet, rest for a few minutes, then slice into thin strips.

4

In the same skillet, add 1 tablespoon of butter and the remaining olive oil. Add the garlic and sauté for 30 seconds until fragrant.

5

Add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they release their moisture and start to brown.

6

Pour in the Madeira wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.

7

Stir in the chicken broth and bring to a simmer. Cook for 5 minutes to reduce slightly.

8

Lower the heat to medium and stir in the heavy cream. Add the Parmesan cheese and cook for 2-3 minutes, stirring until the sauce thickens slightly.

9

Return the sliced chicken to the skillet and toss to coat in the sauce. Let it warm through for 1-2 minutes.

10

Add the cooked penne to the skillet and gently toss to combine. If the sauce is too thick, add a splash of reserved pasta water to loosen it.

11

Garnish with chopped parsley and additional Parmesan cheese, if desired. Serve immediately and enjoy!
