Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.
Season both sides of the chicken breasts with salt and black pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet, rest for a few minutes, then slice into thin strips.
In the same skillet, add 1 tablespoon of butter and the remaining olive oil. Add the garlic and sauté for 30 seconds until fragrant.
Add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they release their moisture and start to brown.
Pour in the Madeira wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
