Savor the irresistible flavors of this *Paleo Brazilian Kibe*, a nutrient-packed twist on the traditional Middle Eastern-inspired Brazilian dish. Bursting with aromatic spices like cumin and allspice, and elevated with the freshness of mint and parsley, this grain-free version swaps classic bulgur for low-carb cauliflower rice, making it both paleo-friendly and gluten-free. Juicy ground beef is combined with pine nuts for added texture and richness, then baked to perfection with a tantalizingly crispy top. Quick to prepare and perfect for meal prep or weeknight dinners, this protein-rich dish is as wholesome as it is flavorful. Serve it with a zesty lemon drizzle or pair it with crisp greens for a complete and satisfying meal.
Preheat your oven to 180°C (350°F).
Finely chop the onion, garlic, mint, and parsley.
In a large bowl, combine the ground beef, cauliflower rice, chopped onion, garlic, mint, parsley, and pine nuts.
Add the ground cumin, allspice, salt, and black pepper to the mixture, and mix thoroughly to combine.
Drizzle in the olive oil and lemon juice, and mix until all ingredients are evenly incorporated.
Grease a baking dish with a little olive oil and transfer the meat mixture into it. Press the mixture down with a spatula to form an even layer.
Score the top of the mixture in a diamond pattern with a knife.
Bake in the preheated oven for 30 to 40 minutes, or until the kibe is cooked through and the top is nicely browned.
Allow the kibe to rest for about 10 minutes before slicing and serving.
Optionally, serve with a side of fresh greens or a paleo-friendly yogurt sauce.
