📝 Instructions

7 steps
1

Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

2

While the pasta is cooking, heat 2 tablespoons (30 ml) of olive oil in a large skillet over medium heat. Add the bread crumbs and toast them, stirring frequently, until golden brown and crispy, about 3-5 minutes. Remove the bread crumbs from the skillet and set aside.

3

In the same skillet, add the remaining olive oil (30 ml) and the butter. Melt over medium heat, then add the garlic cloves, minced, and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

4

Stir in the red chili flakes and cook for 30 seconds to bloom their flavor.

5

Return the cooked pasta to the skillet and toss to coat it in the garlic-chili oil. Add a few splashes of the reserved pasta cooking water to create a light sauce, if needed.

6

Fold in the toasted bread crumbs, finely chopped parsley, and grated Parmesan cheese. Toss everything together until well combined. Season with salt and black pepper to taste.

7

Divide the pasta among serving plates, garnish with extra parsley and Parmesan if desired, and serve immediately.
