Freeze the ribeye steak for 15-20 minutes to make it easier to slice thinly.
While the steak is chilling, slice the onion, green bell pepper, and red bell pepper into thin strips. Mince the garlic cloves.
Remove the steak from the freezer and slice it into very thin strips across the grain.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak strips in batches, cooking for 1-2 minutes per side until browned but not overcooked. Remove the steak from the skillet and set aside.
