Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels and season both sides generously with salt and black pepper.
Clean the mushrooms with a damp paper towel and slice them into halves or quarters, depending on their size.
Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer. Place the steaks in the pan and sear for 3-4 minutes on each side for medium-rare (adjust cook time for desired doneness). Remove the steaks from the skillet and let them rest on a plate, loosely covered with foil.
Reduce the heat to medium. Add the remaining tablespoon of olive oil and 1 tablespoon of butter to the skillet. Add the mushrooms and a pinch of salt, stirring occasionally, and cook for 5-6 minutes until browned and tender.
