  • 1 tbsp Lemon juice
  • 50 g Granulated sugar (for sauce)
  • 2 tbsp Water (for sauce)

In a small bowl, sprinkle the powdered gelatin over cold water and let it bloom for 5-7 minutes.

In a saucepan over medium heat, combine the milk, heavy cream, and granulated sugar. Stir until the sugar is dissolved but do not let the mixture boil.

Remove the saucepan from heat and stir in the almond extract and vanilla extract.

Once the milk mixture has slightly cooled (but is still warm), stir in the bloomed gelatin until it is fully dissolved.
