Nazook, a beloved Armenian pastry, is a delectable treat that perfectly balances buttery layers and a sweet, crumbly filling. This traditional recipe features a tender dough made with sour cream and yeast, chilled to perfection for easy handling, and filled with a simple yet irresistible blend of sugar, flour, and melted butter. In a large mixing bowl, combine the flour and salt. Add the unsalted butter and rub it into the flour until the mixture resembles coarse crumbs.
Dissolve the dry yeast into the sour cream and let it sit for 5 minutes.
Add the sour cream mixture and vanilla extract to the flour mixture. Stir until the dough comes together.
Knead the dough on a lightly floured surface for 5 minutes until smooth and soft. Divide into two equal portions, wrap each in plastic wrap, and refrigerate for 3-4 hours or overnight.
To prepare the filling, mix granulated sugar and 170 grams of the flour in a bowl. Add 115 grams of melted butter and mix until crumbly.
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
On a floured surface, roll out one portion of the chilled dough into a rectangular shape, about 3mm thick.
Spread half of the filling mixture evenly over the rolled dough, leaving a 1cm border on all sides.
Starting from one long edge, roll the dough tightly into a log and pinch the seam to seal.
Cut the log into 4cm segments and place them seam-side down on the prepared baking sheet.
Repeat the process with the second portion of dough and the remaining filling.
In a small bowl, whisk together the egg yolk and milk to create an egg wash. Brush the egg wash over the top of each pastry.
Bake in the preheated oven for 30-35 minutes, or until golden brown and flaky.
Allow the pastries to cool slightly before serving. Enjoy with tea or coffee!
