📝 Instructions

14 steps
1

Boil, peel, and mash the potatoes. Set aside.

2

Finely chop the onion, green chili, and ginger.

3

Heat 1 tablespoon oil in a pan. Add mustard seeds, wait for them to splutter, then add curry leaves and green chili.

4

Add chopped onion and ginger. Sauté until the onion is translucent.

5

Mix in turmeric powder, salt, and mashed potatoes. Stir well to combine. Cook for 5 minutes.

6

Add chopped coriander leaves, mix, and set filling aside.

7

For the chutney, heat 1 tablespoon oil in a pan. Add urad dal and chana dal, sauté until golden brown.

8

Add red chilies, coconut, jaggery, and sauté for 2 minutes.

9

Blend the sautéed mixture with tamarind pulp and 1/2 cup water to a smooth paste.

10

Heat a non-stick pan over medium heat. Pour a ladleful of dosa batter and spread evenly to make a thin dosa.

11

Drizzle oil around the edges. Cook until the underside turns golden brown.

12

Spread a thin layer of chutney over the dosa, then place a portion of the potato filling in the center.

13

Fold the dosa over the filling and serve hot.

14

Repeat the process for the remaining batter and fillings.
