Prepare all the vegetables by finely chopping the onion, tomato, green bell pepper, green chili, and coriander leaves. Grate the carrot. Set aside.
In a medium-sized bowl, combine the chopped onion, tomato, green bell pepper, grated carrot, green chili, coriander leaves, salt, and black pepper. Mix well to evenly distribute the ingredients.
Heat a non-stick griddle or tawa over medium heat. Grease it lightly with a little oil to prevent sticking.
Once the griddle is hot, pour a ladleful of idli/dosa batter onto the center of the griddle. Spread it gently in a circular motion to form a thick pancake, approximately 5 to 6 inches in diameter.
Quickly sprinkle a generous amount of the mixed vegetable topping over the spread batter, pressing gently with the back of a spoon to help the vegetables stick.
Drizzle a few drops of oil around the edges of the uttapam and also over the top.
Cook for about 3-4 minutes on the first side until the bottom is golden brown and the top starts to set.
Gently flip the uttapam using a spatula and cook the other side for another 2-3 minutes until the vegetables are slightly cooked and the uttapam is fully done.
Remove the uttapam from the griddle and repeat the process with the remaining batter and vegetable mixture.
Serve the hot and crispy mix veg uttapam with coconut chutney, sambar, or any chutney of your choice.
