📝 Instructions

12 steps
1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

2

Lightly dust a clean surface with flour and roll out the puff pastry sheet to slightly thin it out.

3

Using a 7.5 cm (3-inch) round cookie cutter, cut out 9 circles from the puff pastry. Place the circles on the prepared baking sheet.

4

Score a smaller circle about 0.5 cm (1/4 inch) inside the edge of each pastry circle to create a border. Be careful not to cut all the way through the pastry.

5

Pierce the center area of each pastry circle with a fork a few times to prevent it from puffing up too much during baking.

6

Slice the cherry tomatoes in half and set them aside.

7

Place about 1 teaspoon of shredded mozzarella cheese in the center of each pastry circle, staying within the scored border.

8

Top the cheese with two cherry tomato halves, cut-side up, and a fresh basil leaf folded in half.

9

Drizzle a tiny amount of olive oil over the top of each tartlet and season with a sprinkle of salt and black pepper.

10

Bake the tartlets in the preheated oven for 12–15 minutes, or until the pastry is golden brown and puffed.

11

Remove the tartlets from the oven and let them cool slightly. Drizzle each tartlet with balsamic glaze before serving.

12

Serve warm or at room temperature and enjoy these bite-sized tomato and basil tarts!
