Remove the stems, seeds, and membranes from the red bell peppers for a mild flavor. For the jalapeño, remove the seeds and membranes as well, unless you prefer a slightly spicier jelly.

Dice the peppers into small chunks and place them into a food processor or blender along with the water. Pulse until the mixture is finely chopped but not liquefied.

Transfer the pepper mixture to a large saucepan. Add the granulated sugar, apple cider vinegar, and salt. Stir to combine.
