Finely dice the onion and mince the garlic.
In a large mixing bowl, combine the ground chicken, onion, garlic, parsley, cilantro, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Mix until everything is evenly distributed.
Divide the chicken mixture into 4 equal portions and shape them into burger patties.
Heat olive oil in a large skillet or grill pan over medium heat. Cook the chicken patties for 4-5 minutes on each side, or until they are golden brown and cooked through to an internal temperature of 75°C (165°F).
While the patties are cooking, prepare the yogurt sauce by combining the yogurt, lemon juice, and fresh mint in a small bowl. Stir well and set aside.
Toast the burger buns lightly, if desired.
Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a cooked chicken patty, two slices of tomato, and two slices of cucumber. Drizzle with the yogurt sauce.
Top with the other half of the bun and serve immediately. Enjoy your Middle Eastern Chicken Burgers!
