📝 Instructions

12 steps
1

Heat the vegetable oil in a large pot over medium heat.

2

Add the diced onion and sauté for 3-4 minutes until softened.

3

Stir in the minced garlic and cook for another 1 minute until fragrant.

4

Add the chicken thighs, salt, and black pepper. Sear the chicken for 2-3 minutes on each side until lightly browned.

5

Stir in the diced tomatoes, dried oregano, cumin, chili powder, and the bay leaf.

6

Pour in the chicken broth and bring the mixture to a boil.

7

Reduce the heat to low, cover the pot, and simmer for 20 minutes until the chicken is cooked through.

8

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

9

Stir in the hominy and continue to simmer for an additional 10 minutes to allow the flavors to meld.

10

Taste and adjust seasoning with additional salt or chili powder if desired.

11

Remove the bay leaf and discard it.

12

Serve the hominy in bowls and top with fresh cilantro. Offer lime wedges, avocado slices, and radishes as optional garnishes.
