📝 Instructions

10 steps
1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

2

In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up into crumbles with a spatula. Drain any excess fat.

3

To the skillet with the ground beef, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 additional minute, until fragrant.

4

Add chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir well to coat the beef mixture with the spices. Remove from heat and set aside.

5

Warm the tortillas slightly to make them pliable. You can do this by microwaving them in a damp paper towel for 20-30 seconds.

6

Spread 1/2 cup of the enchilada sauce evenly in the bottom of the prepared baking dish.

7

Spoon 2-3 tablespoons of the beef mixture into the center of each tortilla, then sprinkle a small amount of shredded cheese on top. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and beef mixture.

8

Pour the remaining enchilada sauce over the top of the rolled tortillas, spreading it evenly to cover. Sprinkle the remaining shredded cheese liberally over the top.

9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

10

Remove the enchiladas from the oven and let them cool slightly. Garnish with chopped cilantro and serve with sour cream, if desired. Enjoy your Mexican Beef Enchiladas!
