📝 Instructions

9 steps
1

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.

2

In a large mixing bowl, combine the ground beef, chorizo, breadcrumbs, egg, minced garlic, cilantro, cumin, chili powder, salt, and black pepper. Mix until well combined but do not overmix.

3

Shape the mixture into meatballs, about 1.5 inches in diameter. You should end up with approximately 16-18 meatballs.

4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the meatballs in batches until browned on all sides, about 2-3 minutes per side. Transfer to the prepared baking sheet.

5

Bake the meatballs in the oven for 12-15 minutes, or until fully cooked (internal temperature should reach 75°C or 165°F).

6

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the crushed tomatoes, chipotle peppers, and chicken or beef stock. Stir well and simmer for 10 minutes until the sauce thickens slightly.

7

Stir in the lime juice and adjust seasoning with salt and pepper to taste.

8

Add the cooked meatballs to the skillet with the sauce. Toss gently to coat the meatballs evenly.

9

Serve hot as an appetizer or paired with rice, tortillas, or a fresh salad for a complete meal.
