📝 Instructions

9 steps
1

Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.

2

In a large, clean mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites on medium speed until they become frothy.

3

Add the cream of tartar and continue beating until soft peaks form.

4

Gradually, one tablespoon at a time, add the granulated sugar to the egg whites while continuously beating. Increase the mixer to high speed and beat until the mixture is glossy and stiff peaks form. This process should take about 5-7 minutes.

5

Add the vanilla extract and briefly mix until incorporated.

6

Using a piping bag fitted with a star or round tip, pipe small mounds or swirls of the meringue mixture onto the prepared baking sheets. Leave some space between each puff to allow air circulation.

7

Bake the meringues in the preheated oven for 90 minutes. Do not open the oven during baking.

8

After 90 minutes, turn off the oven but leave the meringue puffs inside to cool completely with the oven door slightly ajar. This will help them dry out fully.

9

Once cooled, remove the meringue puffs from the baking sheets and store them in an airtight container to preserve their crispiness.
