Ingredients

  • 4 medium ripe tomatoes
  • 2 tablespoons extra virgin olive oil
  • 15 leaves fresh basil leaves
  • 2 cloves garlic cloves
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 loaf ciabatta or baguette

Directions

Step 1

Start by preparing the tomatoes. Wash and core 4 medium ripe tomatoes. Cut them into quarters and remove the seeds, then finely dice the tomatoes. Transfer the diced tomatoes to a medium-sized mixing bowl.

Step 2

Mince 2 garlic cloves finely and add them to the bowl with the tomatoes.

Step 3

Chiffonade 15 fresh basil leaves by stacking them, rolling tightly, and slicing into thin ribbons. Add the basil to the tomato mixture.

Step 4

Drizzle 2 tablespoons of extra virgin olive oil and 1 tablespoon of balsamic vinegar over the tomatoes, garlic, and basil.

Step 5

Season the mixture with 0.5 teaspoons of sea salt and 0.25 teaspoons of freshly ground black pepper. Gently toss everything together so it is well combined.

Step 6

Slice 1 loaf of ciabatta or baguette into 1-inch slices. Brush one side of each slice with a little extra virgin olive oil.

Step 7

Preheat a grill or large skillet over medium-high heat. Once hot, grill the bread slices, oiled side down, until golden brown and crisp, which should take about 2-3 minutes.

Step 8

Remove the toasted bread from the grill and let them cool slightly.

Step 9

To serve, spoon the tomato mixture generously over each slice of toasted bread. Optionally, drizzle a bit more olive oil or vinegar on top before serving. Serve immediately to enjoy the fresh flavors.
