Dice the onion, bell pepper, and celery, and mince the garlic cloves. Add the diced vegetables to the pot and sautΓ© until softened, about 5 minutes.

Stir in the diced tomatoes (with their juice), chicken broth, uncooked rice, bay leaves, and 1 tablespoon of Cajun seasoning. Mix well to combine.

Return the meatballs and sausage to the pot, nestling them into the rice mixture. Bring everything to a boil, then reduce the heat to low and cover. Let it simmer for 25–30 minutes, or until the rice is cooked and the liquid is absorbed, stirring occasionally to prevent sticking.
