📝 Instructions

9 steps
1

Rinse the dried navy beans under cold water and remove any debris. Place the beans in a large bowl, cover them with water, and soak overnight (or for at least 8 hours). Alternatively, use the quick soak method by boiling the beans in water for 1 minute, then letting them sit covered for 1 hour.

2

Drain and rinse the soaked beans. Set them aside.

3

In a large stockpot or Dutch oven, heat the salt pork over medium heat until the fat renders and the pork begins to brown, around 5-7 minutes. Remove any large pieces of salt pork, if desired, and set them aside.

4

Add the diced onion, carrot, celery, and minced garlic to the pot with the rendered fat. Sauté for 5 minutes, stirring occasionally, until the vegetables soften and release their aroma.

5

Stir in the soaked navy beans, chicken or vegetable stock, bay leaf, thyme, salt, and black pepper. Return the salt pork to the pot if you removed it earlier.

6

Bring the mixture to a boil over high heat, then reduce the heat to low. Cover the pot with a lid and simmer gently for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add water if the soup becomes too thick.

7

Once the beans are cooked, taste the soup and adjust the seasoning with additional salt and pepper, if needed.

8

Remove the bay leaf and any large pieces of salt pork before serving.

9

Ladle the Maine Bean Soup into bowls, garnish with fresh parsley, and serve warm with crusty bread or oyster crackers on the side.
