Preheat your oven to 200Β°C (400Β°F).
Bring a large pot of salted water to a boil. Cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.
In the same pot, add the cauliflower florets and boil for 4-5 minutes until just tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, to form a roux.
Slowly add the milk to the roux, whisking constantly to ensure there are no lumps. Cook for 5-7 minutes, stirring frequently, until the sauce thickens.
Remove the sauce from the heat and stir in the grated cheddar cheese, parmesan cheese, mustard powder, paprika, salt, and black pepper until smooth.
Combine the cooked macaroni and cauliflower in a large mixing bowl. Pour the cheese sauce over the mixture and stir until evenly coated.
