Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
Separate the egg whites from the yolks. Place the whites in one bowl and the yolks in another.
Add the cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
In the other bowl, mix the egg yolks with the cream cheese until smooth.
Gently fold the egg yolk mixture into the beaten egg whites, taking care not to deflate the whites.
Scoop the egg mixture onto the prepared baking sheet to form four even rounds. Flatten them slightly with a spoon to shape them like sandwich buns.
Bake the rounds in the preheated oven for 15-17 minutes, or until golden and set.
While the cloud bread is baking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
In the same skillet, add butter and melt over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook the eggs to your preferred doneness.
Once the egg rounds are done, allow them to cool slightly, then assemble the sandwiches by layering one egg round, bacon slices, an egg, a slice of cheese, and top with another egg round.
Serve immediately while the cheese is still warm and melty.
