📝 Instructions

9 steps
1

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions, stirring occasionally. Reserve 1 cup of pasta water before draining, and set the drained pasta aside.

2

While the pasta is cooking, trim the ends of the green beans and cut them into 1-inch pieces.

3

In the same pot of boiling water, blanch the green beans for about 4-5 minutes, or until they're tender but still slightly crisp. Remove them with a slotted spoon and transfer to a bowl of ice water to stop the cooking process, then drain and set aside.

4

In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden.

5

Add the blanched green beans to the skillet and stir to coat them in the garlic-infused oil. Season with a pinch of salt and black pepper.

6

Lower the heat to medium-low. Add the cooked linguine to the skillet, along with the lemon zest, lemon juice, and 1/2 cup of the reserved pasta water. Toss everything together to combine.

7

Crumble the goat cheese over the skillet and continue to toss until the cheese melts and creates a creamy sauce. Add more reserved pasta water, a little at a time, if the sauce is too thick.

8

Taste and adjust seasoning with more salt and black pepper, if needed.

9

Divide the pasta among serving plates and garnish with chopped fresh basil, if using. Serve immediately.
