Cut the pork shoulder into large chunks (about 2β3 inches each) and set aside.
In a large mixing bowl, whisk together the beer, 3 tablespoons of lime juice, olive oil, minced garlic, ground cumin, smoked paprika, 2 teaspoons of salt, and black pepper.
Place the pork chunks into a large resealable bag or shallow dish and pour the marinade over the pork. Seal or cover tightly and refrigerate for at least 2 hours (preferably overnight).
Preheat the oven to 300Β°F (150Β°C).
Transfer the pork and marinade into a large oven-safe dish or Dutch oven. Cover with a lid or aluminum foil and cook in the oven for 3β4 hours, until the pork is extremely tender and can be shredded easily with a fork.
While the pork is cooking, prepare the guacamole. In a medium bowl, mash the avocados with a fork, leaving them slightly chunky.
Add the finely chopped red onion, diced tomato, chopped cilantro, 1 tablespoon of lime juice, and 1/4 teaspoon of salt to the mashed avocados. Gently fold everything together until combined.
Once the pork is done, use two forks to shred the meat directly in the cooking liquid, mixing it well to absorb the flavors.
Serve the shredded lime and beer pork alongside the chunky guacamole. Optionally, serve with warm tortillas for tacos.
