Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
Clean and pat the whole fish dry with paper towels. Ensure it is gutted and scaled.
Season the inside of the fish with ½ teaspoon of salt and ¼ teaspoon of black pepper.
