Heat the olive oil in a skillet over medium-high heat. Sear the flank steak for 2-3 minutes on each side until browned. Remove from heat and set aside.
Place the sliced onion, red bell pepper, green bell pepper, and minced garlic in the bottom of the crock pot.
Add the seared flank steak on top of the vegetables.
