Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy using a hand mixer or stand mixer.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for 30 minutes to chill.
On a lightly floured surface, roll out one portion of dough to about 5 mm (1/4 inch) thickness.
Using a round cookie cutter (about 5 cm or 2 inches in diameter), cut out circles and place them on the prepared baking sheet about 5 cm (2 inches) apart.
Repeat with the remaining dough. For half the circles, cut small shapes (e.g., hearts or circles) out of the center using a smaller cookie cutter to create the sandwich tops.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Let them cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
Once cooled, spread about 1-2 teaspoons of jam on the bottom side of a whole cookie. Top with a cut-out cookie to form a sandwich.
Repeat with the remaining cookies and jam. Store the Jam Jams in an airtight container for up to 5 days.
