📝 Instructions

10 steps
1

Preheat your oven to 180°C (350°F). Grease and line a loaf pan with parchment paper.

2

In a large bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan, eggs, minced garlic, parsley, 1 tsp salt, and 0.5 tsp ground black pepper. Mix well until all ingredients are evenly combined.

3

In a large pot of boiling salted water, cook the cubed potatoes until fork-tender, about 15-20 minutes. Drain and return to the pot.

4

Add the milk, butter, nutmeg, 1 tsp salt, and 0.5 tsp black pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

5

Press half of the meat mixture into the prepared loaf pan, spreading it evenly. Top with an even layer of the mashed potatoes. Spread the remaining meat mixture over the mashed potatoes and pack it down firmly.

6

Place the loaf pan on a baking sheet to catch any drips, and bake for 45 minutes.

7

Meanwhile, in a small bowl, toss the cherry tomatoes with olive oil, Italian seasoning, and a pinch of salt and pepper. Arrange the tomatoes on a baking sheet lined with parchment paper.

8

After the loaf has baked for 45 minutes, place the tomatoes in the oven on a separate rack. Continue baking the loaf and tomatoes for another 15 minutes.

9

Remove the loaf from the oven and sprinkle the shredded mozzarella cheese on top. Return to the oven for 5 minutes, or until the cheese melts and turns golden.

10

Let the meat and potato loaf rest in the pan for 10 minutes before slicing. Serve with the roasted tomatoes on the side.
