Slice the hot dogs into 1/2-inch rounds and set aside.
Peel and dice the potatoes into bite-sized chunks. Peel and slice the carrots into thin rounds. Dice the celery stalks into small pieces. Finely chop the onion and garlic.
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and garlic to the pot. Sauté for 2–3 minutes until the onion is translucent and fragrant.
Add the sliced hot dogs to the pot. Cook for 3–4 minutes, stirring frequently, until they are lightly browned.
Add the diced potatoes, carrots, and celery to the pot. Stir to combine with the hot dogs and season with paprika, oregano, salt, and black pepper.
Pour in the canned diced tomatoes (with their juice) and the broth. Stir well and add the bay leaf.
Bring the mixture to a boil over high heat, then reduce the heat to low. Cover the pot and let the stew simmer for 25–30 minutes, or until the vegetables are tender.
Remove the bay leaf before serving. Taste the stew and adjust the seasoning with additional salt or pepper as needed.
Serve the hot dog stew warm with crusty bread or crackers on the side.
