Preheat your oven to 325°F (165°C).

Remove the turkey giblets and rinse the turkey under cold water. Pat it dry with paper towels.

Season the turkey inside and out with salt and black pepper.

Place the quartered onion, thyme sprigs, and garlic cloves inside the cavity of the turkey.

In a small saucepan, melt the butter over medium heat. Once melted, add honey and lemon juice. Stir until well combined, then remove from heat.

Brush half of this honey butter mixture over the turkey, ensuring to get under the skin where possible.

Place the turkey breast-side up on a rack in a large roasting pan. Scatter the carrots and celery around the bottom of the pan.

Pour the chicken broth into the bottom of the roasting pan.

Roast the turkey, basting every 30 minutes with the remaining honey butter glaze and pan juices, for approximately 3 to 4 hours, or until the internal temperature reaches 165°F (74°C) when a thermometer is inserted into the thickest part of the thigh.

In the last 30 minutes of roasting, remove the foil to allow the skin to crisp and turn golden brown.

Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
