📝 Instructions

10 steps
1

Wash and scrub the baby potatoes, leaving the skins on. Cut any large potatoes in half. Set aside.

2

Trim the ends off the green beans and cut them into 2-inch lengths. Peel and slice the carrots into 1/4-inch rounds.

3

If using fresh peas, shell them; if using frozen peas, measure out the required amount and let them defrost slightly.

4

In a large pot, heat the butter over medium heat until melted. Add the baby potatoes and sauté for 3-4 minutes until lightly coated in the butter.

5

Add the chicken or vegetable stock to the pot and bring to a boil. Lower the heat to a simmer and cook the potatoes for 10 minutes.

6

Add the carrots to the pot and cook for another 5 minutes.

7

Add the green beans and peas to the pot, stirring gently. Cook for an additional 5-7 minutes until all the vegetables are tender but not mushy.

8

Lower the heat to medium-low and pour in the heavy cream. Stir gently to combine and let the mixture warm through for 3-5 minutes. Do not allow it to boil.

9

Season the hodgepodge with salt and black pepper to taste. Stir in the chopped dill just before serving.

10

Serve immediately in bowls, garnished with a sprig of fresh dill if desired. Enjoy your hearty and delicious Hodgepodge!
