Preheat your oven to 375°F (190°C).

Cut the tops off of the green bell peppers and remove the seeds and membranes. Set the peppers aside and dice the tops to use in the stuffing mixture.

Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and chopped bell pepper tops. Sauté for 3-5 minutes until softened.

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain any excess grease if necessary.

Remove the foil and sprinkle the shredded cheddar cheese over the tops of the peppers. Return the dish to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
