Slice the yellow onion thinly.
Heat the olive oil in a medium skillet over medium heat.
Add the sliced onion to the skillet, sprinkle with salt, and cook, stirring occasionally, until the onion softens and turns golden brown (about 10-12 minutes).
Stir in the fresh thyme leaves and cook for an additional minute. Remove the caramelized onions from the skillet and set aside.
Spread 1 tablespoon of unsalted butter evenly on one side of each slice of bread.
On the non-buttered side of two slices of bread, spread a thin layer of Dijon mustard.
Layer 2 slices of sharp cheddar and 2 slices of Gruyère cheese on each mustard-spread slice.
Divide the caramelized onions evenly and layer them over the cheese, followed by a handful of baby arugula.
Place the remaining two slices of bread on top, buttered side facing out.
Heat a large nonstick skillet or griddle over medium-low heat.
Carefully place the sandwiches in the skillet and cook until the bread is golden brown and crispy, and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to help the cheese meld with the other ingredients.
Remove the sandwiches from the skillet, let rest for 1 minute, and cut in half before serving.
