Wash and scrub the potatoes thoroughly. Pat them dry, then pierce each potato several times with a fork.

Rub the potatoes with 1 tablespoon of olive oil and sprinkle them evenly with 1/2 teaspoon of salt. Place them on the grill and cook for 30-40 minutes, turning occasionally, until the skins are crispy and the insides are tender. Remove from the grill and allow them to cool slightly.

Once the potatoes are cool enough to handle, cut them in half lengthwise. Carefully scoop out most of the potato flesh, leaving a thin layer next to the skin to help hold its shape. Save the scooped-out potato for another use, like mashed potatoes.

Brush the hollowed-out potato skins with the remaining 1 tablespoon of olive oil, then sprinkle with the remaining 1/2 teaspoon of salt and the black pepper. Place the potato skins on the grill, skin-side down, and cook for 5-7 minutes until they start to crisp up.

Remove the potato skins from the grill. Sprinkle the inside of each skin with shredded cheddar cheese and crumbled bacon. Return the potato skins to the grill, close the lid, and cook for another 4-5 minutes, or until the cheese is melted and bubbly.

Drizzle the BBQ sauce over each potato skin and grill for another 1-2 minutes to warm the sauce slightly.

Remove the potato skins from the grill and transfer them to a serving platter. Top each potato skin with a dollop of sour cream and a sprinkle of sliced green onions before serving.
