Preheat your oven to 375°F (190°C).
Cut the pita bread into small triangles or bite-sized pieces. Place them on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat evenly.
Toast the pita pieces in the oven for 8-10 minutes or until crisp and golden. Set aside to cool.
Meanwhile, dice the cucumber into small cubes and halve the cherry tomatoes. Thinly slice the red onion. Add these to a large salad bowl.
Add the Kalamata olives, crumbled feta cheese, and chopped parsley to the bowl with the vegetables.
In a small bowl, whisk together the remaining 2 tablespoons of olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.
Drizzle the dressing over the salad mixture and gently toss to coat all the ingredients.
Just before serving, add the toasted pita chips to the salad bowl and toss lightly to combine.
Serve immediately and enjoy your Greek Pita Salad!
