In a medium saucepan, combine the honey and lemon juice. Heat over low to medium heat, stirring constantly with a wooden spoon, until the mixture begins to lightly bubble. This should take about 3-4 minutes.
Add the toasted sesame seeds to the honey mixture and stir well to coat all the seeds evenly. Continue cooking for about 2-3 more minutes, stirring continuously, until the mixture thickens slightly and becomes sticky.
