Preheat your oven to 200Β°C (400Β°F).
Spread the chickpeas on a baking sheet lined with parchment paper. Pat them dry with a paper towel.
In a small bowl, mix olive oil, ground cumin, ground coriander, smoked paprika, ground turmeric, garlic powder, salt, and black pepper to create the spice mixture.
Toss the chickpeas with the spice mixture until evenly coated.
Roast the chickpeas in the oven for 20 minutes, shaking the pan halfway through, until they are crispy and golden.
While the chickpeas are roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, water, and minced garlic until smooth. Add more water for a thinner consistency if desired.
Warm the pita bread in a dry skillet or in the oven for a couple of minutes.
Assemble the shawarma by layering the roasted chickpeas, cherry tomatoes, cucumber, red onion, and fresh parsley onto each pita bread.
Drizzle generously with the tahini sauce.
Wrap the pita around the fillings snugly, serve immediately, and enjoy your Good Karma Shawarma!
