πŸ“ Instructions

9 steps
1

Drain the tofu and wrap it in a clean kitchen towel or paper towels. Place a flat weight over it to press out excess water, leaving it for approximately 10 minutes.

2

While the tofu is being pressed, prepare the broth. In a small saucepan, combine the gluten-free soy sauce, mirin, and gluten-free dashi stock. Bring the mixture to a gentle simmer over medium heat. Once simmering, turn off the heat and set aside.

3

After pressing, cut the tofu into cubes of about 2 inches (5 cm) each.

4

Pour the cornstarch onto a plate and roll the tofu cubes in the cornstarch, making sure each cube is evenly coated.

5

In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches approximately 180Β°C (355Β°F). If you don’t have a thermometer, the oil is ready when a small piece of tofu dropped in the oil sizzles immediately.

6

Carefully add the tofu cubes into the hot oil, working in batches to avoid crowding. Fry each side until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove the tofu and drain excess oil on a plate lined with paper towels.

7

To serve, place the fried tofu cubes in a shallow bowl. Spoon the prepared broth over the tofu.

8

Top each serving with a small amount of grated daikon, chopped green onions, and a touch of grated ginger.

9

Serve immediately and enjoy your Gluten-Free Agedashi Tofu warm.
