Drain the tofu and wrap it with a clean kitchen towel. Place a weight on top, such as a heavy plate, and let it sit for 10-15 minutes to remove excess water.

While the tofu is draining, prepare the sauce. In a small saucepan, combine the dashi stock, soy sauce, and mirin. Bring the mixture to a gentle simmer and add the bonito flakes. Remove from heat, allow to steep for a minute, then strain the sauce into a serving bowl, discarding the flakes.
