Peel the white asparagus spears from just below the tips to the ends and snap off the tough ends.
Bring 500 ml of water to a boil in a large pot. Add 1 teaspoon of sugar and a pinch of salt. Add the peeled asparagus and simmer for 8β10 minutes until tender but still firm. Drain and set aside.
In a large skillet, melt 2 tablespoons of unsalted butter with 1 tablespoon of olive oil over medium heat.
In a shallow bowl, mix breadcrumbs and grated Parmesan cheese. Dredge the blanched asparagus spears in the mixture, pressing lightly to coat them fully.
Place the coated asparagus in the skillet and fry for 2β3 minutes on each side until golden brown and crispy. Remove and set aside on a paper towel-lined plate.
In the same skillet (wipe clean if necessary), add the minced garlic and sautΓ© briefly until fragrant, about 30 seconds.
Reduce the heat to low and pour in the heavy cream. Stir in the chopped parsley, dill, and chives. Add 1 teaspoon of fresh lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Simmer for 3β4 minutes, stirring occasionally, until the cream thickens slightly.
Transfer the fried asparagus to a serving platter and drizzle with the herb cream sauce. Serve immediately, garnished with additional fresh herbs if desired.
