πŸ“ Instructions

8 steps
1

Trim any excess fat from the steak and cut it into 1-inch cubes. Pat the steak cubes dry with paper towels to help them sear properly. Season the cubes with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

2

Wash and halve the baby potatoes. Toss them in a mixing bowl with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

3

Heat a large skillet or cast-iron pan over medium heat. Add the seasoned potatoes flat-side down in a single layer and cook for about 5-7 minutes without stirring, until golden and crispy. Flip the potatoes, reduce the heat to medium-low, and cook for an additional 5 minutes until tender. Remove the potatoes from the pan and set them aside.

4

In the same skillet, increase the heat to medium-high and add 1 tablespoon of olive oil and 1 tablespoon of butter.

5

Once the butter is melted and sizzling, add the steak cubes in a single layer. Sear for about 2 minutes on one side until browned, then flip and sear the other side for another 2 minutes. Remove the steak from the skillet and set aside.

6

Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet along with the minced garlic and chopped rosemary. Stir for about 30 seconds until fragrant.

7

Return the cooked potatoes and steak to the skillet. Gently toss everything together to coat in the garlic-rosemary butter. Cook for 1-2 minutes until heated through.

8

Remove from heat, garnish with fresh parsley, and serve immediately.
