📝 Instructions

8 steps
1

Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly.

2

Pierce each potato several times with a fork and place them on a baking sheet. Bake the potatoes for 45 minutes, or until the skins are crispy and the insides are tender.

3

While the potatoes are baking, finely mince the garlic. Melt the butter in a small saucepan over low heat, then add the minced garlic. Cook for 2-3 minutes until fragrant, but do not let the garlic brown. Stir in the olive oil, salt, and pepper, then set aside.

4

Remove the baked potatoes from the oven and let them cool for 10 minutes, or until they are safe to handle. Slice each potato in half lengthwise and scoop out most of the flesh, leaving a 1/4-inch thick layer of potato attached to the skin. Reserve the scooped-out potato flesh for another use, like mashed potatoes.

5

Brush the inside and outside of each potato skin generously with the garlic butter mixture. Place them back onto the baking sheet, skin-side down, and bake them for an additional 10 minutes until crispy.

6

Remove the potato skins from the oven and sprinkle shredded cheddar cheese evenly inside each skin. Crumble the cooked bacon and distribute it over the cheese.

7

Return the potato skins to the oven and bake for 5-7 more minutes, or until the cheese is melted and bubbly.

8

Remove the potato skins from the oven, top with a dollop of sour cream, and garnish with chopped chives. Serve immediately and enjoy!
