The honey-lime dressing ties everything together with a touch of sweetness and citrusy brightness, making it a refreshing side dish for barbecues, picnics, or light meals. Ready in just 20 minutes with no cooking required, this easy recipe is a deliciously healthy way to highlight tropical fruit and is ideal for pairing with grilled seafood, chicken, or tofu. Perfect for summer gatherings or as a vibrant appetizer, this salad will be the star of any table.
Cut off the top and bottom of the pineapple. Stand it upright and slice off the outer skin, removing any remaining eyes. Cut the pineapple into quarters lengthwise, remove the core, and dice the flesh into bite-sized pieces. Transfer to a large salad bowl.
Peel the cucumber, cut it in half lengthwise, and scrape out the seeds with a spoon. Dice the cucumber into small pieces and add to the pineapple.
Dice the red bell pepper and finely slice the red onion. Add both to the salad bowl.
Roughly chop the fresh cilantro and add it to the mixture in the bowl.
If using jalapeño for heat, remove the seeds (or keep them for extra spice) and finely chop. Add to the salad.
In a small bowl or jar, whisk together the lime juice, lime zest, olive oil, honey, salt, and black pepper until well combined.
Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
Taste and adjust seasoning as needed. Refrigerate the salad for 15-20 minutes before serving for the flavors to meld.
Serve chilled as a light appetizer, side dish, or paired with grilled seafood or meat.
