Prepare the prune filling: In a small saucepan, combine the dried prunes, water, and granulated sugar. Bring to a simmer over medium heat.

Cook the prunes for about 10–12 minutes, or until they are soft and most of the liquid is absorbed. Stir occasionally to prevent sticking.

Remove the saucepan from heat and let the prune mixture cool for a few minutes. Add the vanilla extract and blend the mixture into a smooth paste using a food processor or immersion blender. Set aside to cool completely.

Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
