Preheat your oven to 180°C (350°F). Cut the pita bread into bite-sized pieces and place them on a baking tray. Drizzle with 1 tablespoon of olive oil and toast in the oven for 8-10 minutes, or until crispy and golden. Set aside.

While the bread is toasting, drain and rinse the chickpeas. Place them in a saucepan, cover with water, and heat over medium until warmed through (about 5-7 minutes). Add a pinch of salt to the water. Drain and set aside.

In a mixing bowl, whisk together the yogurt, crushed garlic cloves, lemon juice, 1/2 teaspoon of salt, and 1 tablespoon of olive oil. Set this yogurt sauce aside.

In a small pan, heat the butter and the remaining 1 tablespoon of olive oil over medium heat. Add the pine nuts and sauté until they turn golden brown. Remove the pine nuts with a slotted spoon and set aside. Add the cumin, paprika, and the remaining 1/2 teaspoon of salt to the butter mixture and stir well. Remove from heat.

To assemble, layer the toasted pita bread at the bottom of a large serving dish. Spread the warm chickpeas over the bread, followed by an even layer of the yogurt sauce.

Drizzle the spiced butter over the top, ensuring it’s evenly distributed. Sprinkle the toasted pine nuts over the dish and garnish with chopped fresh parsley if desired.
